For many, eating halal is a simple choice. But for those who understand the details of the modern meat industry, it is clear that not all "halal" is created equal.
With the rise of mass-production and commercial farming, the standards of halal have sometimes been compromised. Machine-slaughter, horizontal stunning, and lack of oversight have made it difficult for consumers to trust what is on their plate.
At Ribs 'n' Kabobs, we believe in complete transparency and absolute peace of mind. That is why we are proud to be certified by the Halal Food Standards Alliance of America (HFSAA).
In this article, we will explain what HFSAA is, the strict standards they enforce, and why our certification matters to you.
Who is HFSAA?
The Halal Food Standards Alliance of America (HFSAA) is a non-profit halal certification organization based in the United States. Founded by Islamic scholars and food industry professionals, HFSAA was created to address the gaps in the American halal market and establish a reliable, high-integrity standard for halal meat.
Unlike some certification agencies that simply charge a fee and issue a certificate, HFSAA is known for its rigorous, hands-on auditing process.
The HFSAA Standard: 100% Zabiha Halal
HFSAA enforces a strict definition of halal that aligns with traditional Islamic jurisprudence. To be certified by HFSAA, a restaurant or supplier must meet these core criteria:
1. 100% Hand-Slaughtered (Zabiha): The animal must be slaughtered individually by hand by a Muslim who recites the blessing over each animal. Mechanical or machine slaughter is strictly forbidden. 2. No Horizontal Stunning: The animal must be alive and healthy at the time of slaughter. Stun-to-kill methods, which are common in mass production, are not allowed. 3. No Cross-Contamination: The facility must be free from any contact with non-halal products, including pork, alcohol, or non-certified meats. 4. Traceability: Every batch of meat must be fully traceable back to its source, with detailed invoices and receipts proving it came from a verified HFSAA-approved slaughterhouse.
The Auditing Process: How We Maintain Our Standard
Getting certified is just the first step. Maintaining HFSAA certification requires ongoing diligence:
- Unannounced Kitchen Audits: HFSAA inspectors conduct random, unannounced audits of our kitchen in Artesia. They inspect our cold storage, check labels, verify seal integrity, and review our cooking surfaces.
- Invoice Auditing: Every single meat delivery we receive must be documented. HFSAA reviews our purchase invoices to ensure we never source meat from uncertified suppliers.
- Staff Training: Our kitchen team is trained on strict cross-contamination protocols, ensuring that no outside food or non-halal items ever enter our preparation areas.
